Soy Cirtus Tofu Salad

My mom, sisters and I go out to brunch/lunch often and Le Pain Quotidian is a restaurant that is always on our list of options. We have been countless times, and I’m sure we’ve hit every location in the Los Angeles area. One of my go to lunches is their Organic Tofu and Shaved Cabbage Salad. This is a salad that I recreate at home weekly.
Soy CitrusTofu Salad
Orange Soy Tofu Salad (serves 1)
Ingredients:
3 oz firm tofu (1/4 block of tofu)
2 cups arugula
1/4 cup shredded carrot
1/4 cup shredded purple cabbage (optional, I didn’t have it on hand, but it’s adds such a pretty color to the salad!)
1 scallion, sliced
2 tsp sesame seeds
2 tbsp soy sauce
2 tbsp orange juice
1 tsp sesame oil
1/8 tsp ground ginger
1/8 tsp ground garlic

Directions:
Cube tofu and place on a few pieces of paper towel to remove some of the moisture for about 5, longer if you have time. Meanwhile, in a small bowl mix scallion, soy sauce, orange juice, sesame oil, ginger, and garlic. Add tofu to dressing and let marinade a few minutes. Place arugula and shredded carrots and cabbage in a bowl, top with tofu, dressing and sesame seeds. Enjoy!
