This grilled chicken recipe with basil and lime (I used lemons from my tree) screams SUMMER! It is super delicious. This has become an instant favorite especially since I have several of the ingredients growing in my backyard: lemons, basil, and scallions.  This chicken recipe is light, fresh and healthy, perfect for dining al fresco on a warm summer night.

Grilled Kabobs

Grilled Kabobs Over the weekend we got all the family together for mini progressive dinner. First stop was my moms for wine and cheese in her front yard under the evergreens. It was complete with homemade crostini by my dad and crackers topped with Brie and fig jam. Meanwhile at my house the chicken, steak and veggies were marinating for dinner. My sisters, husband and I headed back to my house a little early to heat up the grill and get to skewering while the rest of the party had a last glass of wine. The party continued to our house for kabobs, a fire pit and s’mores. Sounds like a perfect 4th of July party too. We may have to repeat this on Friday.

Lemon Rosemary Chicken
3 lbs boneless skinless chicken, cubed
3 mini lemons zest and juiced
3 cloves of garlic minced
2 sprigs of rosemary, stalk removed
olive oil
sea salt
freshly ground pepper

Soy Steak
3 lbs steak, cubed
soy sauce
3 cloves of garlic, minced
freshly ground pepper

Veggie skewers
red potatoes
red, orange and yellow bell peppers
red onion
button mushrooms
zucchini
2 mini lemons zest and juiced
sea salt
2 sprigs of rosemary, stalk removed
freshly ground pepper

Baby Back Ribs on the Grill

Baby Back Ribs Since Memorial Day was the unofficial start of summer, it is officially time to start grilling.  My husband and I got a beautiful grill/smoker as a wedding/Christmas gift and now is the time to put this baby to work.  Andrew wanted his first grilling experience to be an all day event, but our Memorial Day BBQ menu was more of a last minute decision.  Andrew followed this Prize Winning Baby Back Ribs recipe.  We used our favorite Sweet Baby Ray’s Barbeque Sauce and it turned out perfectly.  You know it was a successful BBQ when everyone has barbeque sauce on their face.

While Andrew manned the ribs on the grill, I womanned the corn on my indoor grill. I slathered each corn with butter and sprinkled them with salt, garlic powder and dried parsley.  I wrapped the corn in foil and grilled for about 15 minutes.  My mom brought potato salad and Andrew’s step-mom brought a fruit salad.  All the makings of a perfect BBQ if you ask me.  The perfect ending to the meal was a root beer float by the fire.
