Healthy Coconut Granola

Coconut Granola
I love crunchy foods, but most crunchy foods aren’t the healthiest. That satisfying crunch of granola is just unbeatable. Making granola at home is very quick, easy and cost effective. It makes dull yogurt a million times better. The coconut oil and dried coconut adds a tropical warmth to the granola, perfect for summertime. (Plus coconut oil has countless health benefits!)

Coconut Granola
1 cup old fashioned oats
1/2 cup walnuts, chopped
1/2 cup flaxseeds
1/4 cup sesame seeds
1/4 cup pepitas
1 large egg white
1/4 tsp sea salt
1/4 cup honey
1 tbsp coconut oil
1/2 cup sweetened dried coconut, chopped
cooking spray

Preheat oven to 350. Combine oats, nuts and seeds in a large bowl. In a small bowl whisk egg white with salt until light and frothy. In a small bowl pour in coconut oil and microwave for a couple seconds until melted. Drizzle honey and melted coconut oil into egg white. Mix egg and honey mixture into oats and seeds and stir together until combined. Coat a rimmed baking dish with cooking spray and spread granola out evenly on the greased baking dish. Bake for 15 minutes, stirring half way through. Let cool and and stir in dried coconut or any other dried fruit.

Suggested uses: over yogurt, oatmeal, smoothies, or ice cream.
