Classic Banana Bread

Classic Banana BreadMy grandparents are coming home today from a month long cruise.  They love to travel and have been everywhere!  I know they love exploring the globe, but also love coming home.  To give them a nice homecoming I decided to make them a loaf of classic banana bread.  My grandpa’s childhood best friend’s wife gave me this recipe when I got married.  The fact that it’s her recipe makes it an even sweeter welcome home.  I found these adorable paper loaf pans at Home Goods (also available at Bed, Bath & Beyond.) They make a darling gift with a little note and bakers twine.

Classic Banana Bread
Ingredients:
1 egg, lightly beaten
1 cup sugar
1/4 cup melted butter
3 ripe bananas, mashed
1 1/2 cup flour, sifted
1 tsp baking soda
1 tsp salt
1/2-1 cup chopped walnuts

Directions:
Preheat oven to 375.  Mix egg, sugar, butter, and bananas in a large bowl.  In a small bowl mix flour, baking soda and salt. Slowly add flour to the banana mixture.  Stir until incorporated.  Fold in walnuts.  Pour into 2  7-inch paper loaf baking pans (or 3 mini aluminum foil loaf pans) and bake for 35-40 minutes.
