Happy Hump Day! To make it through a busy week I turn to meals that take little effort and are ready in minutes. This Sweet & Spicy Citrus Tilapia from Cooking Light is one of my go to dishes for a weeknight. It’s quick, easy, healthy and very flavorful. What more could you want for a weeknight meal? I am not a fish lover by any means, but tilapia is very mild and the flavoring makes it a winner. I always seem to microwave a sweet potato to serve along side because it tones down the spice and adds to the sweetness. I follow the recipe exactly and like to let it get a little crispy on top to add some texture. Enjoy!
