We were considering doing our Saturday ritual of Finnish Pancakes and Shark Tank (love that show!), but felt the need for something a little bit more substantial and healthy for a day of gardening and spring cleaning. This yummy and healthy breakfast is just the fuel we need to get the job done!
1/2 cup steel cut oatmeal
1/4 cup unsweetened vanilla almond milk
a dash of vanilla extract
1/4 cup sweetened shredded coconut
a sprinkling flax seeds
Bring 2 cups of water to a boil. Stir in oatmeal and cook at medium heat for 5 minutes, until slightly thickened. Reduce heat to simmer and cook for 30 minutes. With 5 minutes left on the oatmeal add 1/4 cup of almond milk and a dash or two of vanilla extract.
While the oatmeal is cooking roughly chop the coconut and dice the mango.
