Tropical Oatmeal

We were considering doing our Saturday ritual of Finnish Pancakes and Shark Tank (love that show!), but felt the need for something a little bit more substantial and healthy for a day of gardening and spring cleaning.  This yummy and healthy breakfast is just the fuel we need to get the job done!

Tropical Oatmeal

Ingredients:
1/2 cup steel cut oatmeal
1/4 cup unsweetened vanilla almond milk
a dash of vanilla extract
1 mango
1/4 cup sweetened shredded coconut
a sprinkling flax seeds
brown sugar

Directions:
Bring 2 cups of water to a boil. Stir in oatmeal and cook at medium heat for 5 minutes, until slightly thickened. Reduce heat to simmer and cook for 30 minutes. With 5 minutes left on the oatmeal add 1/4 cup of almond milk and a dash or two of vanilla extract.

While the oatmeal is cooking roughly chop the coconut and dice the mango.

Top oatmeal with brown sugar, mango, coconut and flax to your liking and transport yourself to the island of your choice. Enjoy.

  1. this is a great healthy version of oatmeal. I like that you included flaxseed, protein (the almond milk) and mango. This covers good amount of vitamins a person can benefit from in the morning.
