On Valentine’s Day my hubby took me to the Republic of Pie and I had their delightful Chai Oatmeal. I had never heard of a chai oatmeal before and fell in love with the idea. So of course I had to try it for myself at home and here’s what I did.
Chai Oatmeal (serves 2)
1/2 cup steel cut oats
1 cup Oregon Chai Tea Concentrate
1 cup milk (I used unsweetened vanilla almond milk)
Bring milk and tea to a boil. Add steel cut oats and stir. Cook at medium heat uncovered for 5 minutes until it thickens a little. Reduce heat to simmer and cook for 30 minutes uncovered, stirring occasionally. (When 5 minutes were left I added 1/4 cup of water because I like my oatmeal a little more runny, but if you like it thick you can leave it out.)
Top with brown sugar, berries and my homemade Flaxseed Granola.
