Flaxseed Granola

Flaxseed GranolaI have yogurt and fruit for breakfast everyday.  Yogurt always needs a little crunch, but most granolas from the market are loaded with sugar.  So I typically end up crumbling a healthy cereal over my yogurt, while still wishing I had a little granola to add.  I decided to create a healthy homemade granola using Whole Living as my guide.

Flaxseed Granola
1 cup old fashioned oats
1/2 cup walnuts, chopped
1/2 cup flaxseeds
1/2 cup sunflower seeds
1/4 cup pepitas
1/4 tsp cinnamon
1 large egg white
1/4 tsp sea salt
1/4 cup honey
1 tbsp olive oil
1/2 cup dried cranberries
cooking spray

Preheat oven to 350.  Combine oats, walnuts, flaxseeds, sunflower seeds, pepitas and cinnamon in a large bowl.  In a small bowl whisk egg white with salt until light and frothy.  Drizzle honey and olive oil into egg white.  Mix egg and honey mixture into oats and seeds and stir together until combined.  Coat a rimmed baking dish with cooking spray and spread granola out evenly on the greased baking dish.  Bake for 15 minutes, stirring half way through.  Let cool and and stir in dried cranberries.
