Baked Sausage & Veggies

Baked Sausage & VeggiesWe finally got some rain in LA!  Our roses and albutilon we planted last weekend will be very pleased!  Rainy days to me mean cozy nights in with comfort food and cuddling up with hubby and puppy to watch TV marathons (tonight: the final episodes of Breaking Bad).

Baked Sausage & Veggies (Adapted from Kayotic Kitchen)
4-5 sweet Italian chicken sausages
1/2 lb white potatoes
5 small carrots
1/2 large onion
1/2 large red bell pepper
1/2 lb broccoli
1 tbsp olive oil
cooking spray
salt and pepper
1/2 tsp Mrs. Dash Original Blend Salt Free (or Italian seasoning)
1 tbsp balsamic vinegar

Preheat oven to 425.  Chop veggies, making the carrots a smaller than the rest (they take awhile to cook through).  Spray a large baking pan with cooking spray.  Add vegetables to the pan and sprinkle with olive oil, salt, pepper and Mrs. Dash.  Mix together and bake for 30 minutes, mixing periodically.  While the veggies are doing their thing, brown the sausages in a saute pan on high for just a few minutes per side to add some color.   Cut sausages in half  or slices. Add sausages and balsamic vinegar to the veggies at the 20 minute mark and continue baking for another 10 minutes.
