Healthy & Delicious Muffins When I have a leftover ripe banana I love to make Zucchini Banana and Flaxseed Muffins from Martha Stewart.  These muffins are extremely moist without using any butter or oil.  I substitute half of the flour for whole wheat flour and unsweetened vanilla almond milk for whole milk just to make them even more nutritious.  I love making these muffins over the weekend for a healthy grab and go breakfast all week long.
