Kale: The IT Green

I’ve been trying out different recipes for the oh so famous kale. I recently shared my  Berry Kale Smoothie, which is my favorite way to partake in the kale craze.  This is a another fun (not sure it’s really fun…) way to eat kale.  Kale chips are light and crispy; they almost melt in your mouth.  I refuse to buy packaged kale chips because they are ridiculously expensive for barely anything in a bag. I’ve made several different versions of kale chips and this is my favorite.  Obviously they don’t come close in comparison to real chips, but they are an easy way to satisfy a salt craving and add some excellent nutrition into your diet.

Kale Chips

Soy Kale Chips
8 oz kale
1/2 tbsp olive oil
1/2 tbsp sesame oil
1 tbsp soy sauce
1 tbsp sesame seeds

Preheat oven to 300 degrees. Remove inner ribs from the kale leaves and chop kale into smaller pieces. Mix kale, oils and soy sauce in a large bowl. Lay the kale out in a single even layer on a silpat lined baking sheet (or parchment lined baking sheet). You don’t want to crowd the kale so depending on how much you make, you may need two baking sheets. Sprinkle sesame seeds over the kale and bake for about 20 minutes. And voilà you have kale chips!
