Banana Pancakes

Banana Pancakes
1 cup Whole Wheat White Flour
2 tsp baking powder
1/4 tsp cinnamon
1 egg lightly beaten
1 banana sliced for garnish
2 tbsp apple sauce/vegetable oil
1 tbsp honey
1 cup milk
2 bananas, mashed
1 banana sliced (optional)
1/4 cup walnuts (optional)
1/4 cup chocolate chips (optional)
maple syrup

If you want sliced bananas as a garnish, saute with butter over medium heat until lightly browned and set aside. Mix flour, baking powder and cinnamon in a medium bowl. In a separate large bowl mix apple sauce, honey, milk and mushed bananas. Slowly incorporate flour into banana bowl until combined, don’t over mix.

Coat a large saute pan with butter over medium heat and add about 1/4 cup of batter for each pancake. If you want to add nuts or chocolate chips add when there are a couple bubbles on top. They are ready to flip when there are little holes throughout the top side of the pancake and the under side is golden brown. Flip and cook opposite side till golden brown. Stack pancakes and top with butter, bananas, and more nuts, chocolate chips if you wish and of course, maple syrup!Makes about 12 pancakes, Enjoy!
